Does Dark Roast Coffee Have More Caffeine?

Do not choose roast level mainly for caffeine.
Choose light, medium, or dark roast according to the flavour you enjoy and the way you brew. When caffeine is the priority, look first at:
- The coffee species
- The dry coffee dose
- The serving size
- The brewing method
- The extraction achieved
- Whether you measure by weight or by volume
Roast colour influences caffeine in the brew, but not in a simple or reliable enough way to guide an everyday purchase by itself.
What recent research found
A 2024 controlled study prepared 90 brews using two Ethiopian coffees, five roast degrees, and three brew times. The researchers measured extraction yield, caffeine concentration, roast density, mass loss, and bean porosity.
Under identical grind and brewing conditions, caffeine concentration was generally lower in the darker-roast brews than in light- and medium-roast brews. However, when brews were compared at the same extraction yield, darker roasts could show higher caffeine concentration.
The reason is that roasting creates competing effects:
- Darker roasting increases bean porosity, which can make compounds easier to extract.
- Extended roasting also causes greater mass loss and can reduce the amount of extractable material remaining.
- Extraction yield changes with roast, grind, brewing time, and water.
The study’s conclusion was not that one roast universally wins. It was that caffeine in the finished brew depends on the interaction between roast degree and extraction.
Why studies sometimes appear to disagree
Caffeine can be reported in several different ways:

If you weigh 18 g of light roast and 18 g of dark roast, both recipes begin with the same dry coffee mass. Any caffeine difference then depends on the coffees, roast conditions, and extraction.
If you measure whole beans with the same scoop, the darker roast may occupy the scoop with less total coffee mass because the beans are less dense. That can reduce the caffeine dose before brewing even begins.
This is one reason a digital scale is more useful than a scoop. Volume measurements are affected by bean size, roast density, grind size, and how tightly the coffee settles.
Roast flavour is not caffeine strength
Darker roasts usually express more roasted, smoky, bitter, or ashy flavours and less of the bright origin character associated with lighter roasting. Those flavours can make the cup seem stronger.
Caffeine itself is not the main explanation for coffee bitterness. Roasting creates and transforms several compounds that contribute to bitter taste.
