In brief: Whole-bean coffee usually tastes best from a few days after roasting until roughly three to four weeks, provided it is sealed and stored away from heat, moisture, light, and air. Espresso often benefits from a longer resting period than filter coffee. Ground coffee loses aroma faster, so buy smaller quantities and use it promptly.
Most people check the expiry date when they want to know whether a bag of coffee is still fresh. The expiry date is useful for food safety and stock control, but it tells you very little about flavour.
Coffee can remain safe to drink while its aroma, sweetness, and clarity have already faded. In the roastery, the first warning is usually the smell. Fresh coffee has a distinct aroma as soon as the bag is opened or the beans hit the grinder. Older coffee becomes quieter. The cup follows soon after.
That is why I look at the roast date first. Freshness is not about drinking coffee immediately after roasting. It is about giving the coffee enough time to settle, then brewing it before its best qualities disappear.
What happens to coffee after roasting?
Roasting transforms green coffee into a porous, aromatic bean filled with carbon dioxide and volatile flavour compounds. After roasting, carbon dioxide gradually escapes from the bean in a process known as degassing. One-way valves allow this gas to leave the bag while limiting the amount of outside air entering it.
Degassing affects brewing. Coffee used too soon after roasting can behave inconsistently, especially as espresso. Excess gas can interfere with water contact, contribute to uneven extraction, and make shots difficult to repeat. The amount of rest needed depends on the coffee, roast level, packaging, and brewing method.

Use taste and brewing behaviour as the final guide. If espresso is unusually foamy, inconsistent, or difficult to extract, the coffee may need more rest. If the aroma is fading and the cup tastes flat, it may have rested too long or been stored poorly.

Why does ground coffee lose freshness faster?

Grinding immediately before brewing remains the best option. When that is not practical, pre-ground coffee can still make a good cup. Buy a smaller pack, keep it tightly sealed, and choose the correct grind size for your brewing method.
How to store roasted coffee properly
- Keep the coffee in a cool, dark, and dry cupboard.
- Use the original high-barrier valve bag when it seals properly.
- Remove excess air gently and close the bag after every use.
- Keep coffee away from the stove, oven, sunlight, and sink.
- Buy an amount you can reasonably finish within a few weeks.
